We started with the same championship pork injection base that won two World BBQ Championships and put us in the Barbecue Hall of Fame. Then we reworked the phosphate blend, bumped the concentration, and tuned the flavor profile for the kind of cook where the meat has no place to hide.

More phosphate means stronger water binding. Stronger water binding means moisture stays locked in the muscle longer — even when the pit is running hot, the air is dry, and you are not wrapping until hour eight. This is not the pork injection for a set-it-and-forget-it pellet cook. This is the injection for open pits, offset stick burners, barrel smokers, and anyone cooking pork the hard way.

Flavor-wise, Open Pit leans savory with a gentle pepper backbone. It does not sweeten your pork. It does not mask it. It seasons it from the inside and lets the meat taste like meat.
